Koulourakia Smyrneika
Smyrna Cookies

    Ingredients:

    • 1250 gr (2.8 Ib) butter
    • 1 kg (2.2 Ib) powdered sugar
    • 4 egg yolks
    • 4 kg (8.8 Ib) flour
    • 2 tablespoons baking powder
    • 2 teaspoons baking soda
    • 1/2 cup orange juice
    • 2/3 cup brandy Vanilla
    • 1 beaten egg for glazing

Preparation:

Cream the butter with the sugar. Add the egg yolks one by one, beating constantly. Sift the flour with the baking powder and bal<ing soda and add it to the mixture, little by little. Next, gradually add the orange juice and brandy, and finally the vanilla. Knead the ingredients together thoroughly and form into small circles or fancy shapes. Brush them with the beaten egg and bake in a moderate oven for about 20 minutes.

Koulourakia Nistissima
Lenten Cakes

    Ingredients:

    • 1 1/2 cups olive oil
    • 2 cups sugar
    • 1 1/2 cups orange juice
    • 2 teaspoons baking soda
    • 1 wineglass brandy
    • 1250 gr (2.8 Ib) flour
    • Oil for the baking sheet 

Preparation:

Beat the sugar into the olive oil. Add the orange juice, the baking soda, dissolved in the brandy, and finally the flour, little by little. Knead the ingredients together thoroughly. Form the dough into 6-inch (15 cm) long cylinders the thickness of a finger. Shape it into circles or twists or figure- eights, place them on a lightly oiled baking sheet and bake them in a moderate oven for about 20 minutes.

Easter Biscuits

Ingredients:

    • 1 kg (2.2 Ib) flour
    • 2 level teaspoons baking powder
    • 1 teaspoon baking soda
    • 2 cups butter
    • 3 cups sugar
    • 2 eggs
    • A few drops of vanilla
    • 5-6 tablespoons milk
    • 1beaten egg for glazing 

Preparation:

Sift the flour with the baking powder and baking soda. Beat the eggs and vanilla into the butter. While still beating, add the flour little by little, alternating with the milk. Knead the dough well and form into small rings or fancy shapes. Place them on a buttered baking sheet and brush them with the beaten egg. Bake in a moderate oven for 1S-20 minutes.
